The rice is “Tsukiakari” from Hiroshima Prefecture. It is a Chinese congee made with chicken broth cooked for a long time over low heat using fresh morning-picked chicken and rare “Hattori ginger” grown in Fukuyama City Ekiya. The rice is cooked with the broth to absorb the flavor.
